Copy of 'Wine and the Wine Trade: five lectures delivered to wine trade students at Vintners' Hall, London, and at Birmingham, in Autumn, 1946 (London, 1947); notes taken at Scottish Hotel School lectures on food, wine and dining room organisation.

Hard-backed volume of notes taken at lectures attended by Graham Ross at the Scottish Hotel School. The notes are divided into three sections and those on wine (section B) are continued in OF/26/15/3/3. A double-sided instruction sheet on the operation of the Scottish Hotel School telephone switchboard and a blank Scottish Hotel School menu card are enclosed at the front of the volume.

Enclosed with the letter is a typed, 2-page 'Memorandum on the Organisation of the Scottish Hotel School by Mr Dallas', outlining the difficulties that had influenced his decision to resign.

Enclosed with the prospectus is a Scottish Hotel School menu card dated 24 October 1950, and a programme for the Glasgow and West of Scotland Commercial College presentation of diplomas and prizes for session 1950-1951, held on 1 December 1951.
